- 1 cup lentils
- 2 carrots, diced
- 2 cups chopped onion
- 2 tbsp olive oil
- 1 tbsp plain flour
- salt
- Chives and strips of carrot to decorate
Directions
- Wash the lentils.
- Put in a saucepan together with the carrots and cover with water.
- Cook until soft.
- Blend to a fine puré. In the meantime fry the onion in the olive oil until lightly golden.
- Add the flour and mix well.
- Add 2 ladles of the lentil puré and mix well. Add the rest of the purée and thin down with some water.
- Season.
- Serve hot decorated with chopped chives and strips of carrot.
